Half Crocked Fish
Ingredients:
fish fillets
1 cup
salt
1 qt
water
sliced carrots
sliced onions
sliced celery
sliced lemon
peppercorns
bay leaves
allspice
mustard seeds
equal parts
white vinegar and water, enough to cover (see below)
Instructions
1.
Make brine solution with salt and water. Soak fillets overnight in brine.
2.
Place alternate layers of fish and vegetables in a crock or jar. Sprinkle each layer with spices.
3.
Cover with equal portions white vinegar and water. Refrigerate and let soak for at least a week before serving.
